trot 4.19.2011

…Well here we go. Trotters and an ear found their way into my kitchen thanks to the great butchers at Pastaworks. I recently purchased a terrine by Le Creuset and I really wanted to break it in with a pork in aspic. The aspic turned out great, but make sure you have plenty of meat on your trotters, or like me you will be left with no pork to go in the pork aspic.
