Sandwiches can be glorious, but some sandwiches for one reason or another are often destine for mediocrity. Whether it be the very nature of the beast, or our fast paced lives that keep certain sandwiches from ascending to greatness. If we just give a little respect to those sandwiches that sustain us in our most hurried time of need, you may find that your mediocre chomping turns to elated eating! Instead of the trusty ‘ol PB&J, I thought why not a PBB&LC (peanut butter, bacon, and lemon curd)? It was spot on. As I hypothesized the great acidity of the lemon curd cut right through the richness of the peanut butter and bacon fat. The result was a hop up of an old classic that tasted totally different and will find a place on my table regularly. The lemon curd I used is from Elizabethan Pantry and I highly recommend it. Eat up!
