Piments Doux Frit 8.12.11

Yesterday I was at Whole Foods doing some shopping when an unexpected ingredient appeared which altered my food plans for the evening. Padron peppers! There is an amazing French specialty dish that I love to make called Piments Doux Frit (fried peppers) that calls for this hard to find Spanish pepper. I usually substitute Shishito peppers for the Padron cause they are more readily available. All you need is Padron peppers, garlic, sage, lemon, sea salt. Get your cast iron blistering hot, add peanut oil, and saute your ingredients till blistered and little char appears. season with salt and lots of fresh lemon juice. Serve with red or white Bordeaux and eat. These will blow your mind! I usually don’t include cooking instructions, but this is a really special dish so I thought I would share the recipe.
