As the world of culinary icons go, it is hard not to love Thomas Keller’s work! Visiting my parents last weekend I noticed my mother’s copy of Ad Hoc was laying open and I happened to look up eggplant, as I was looking for inspiration for my last pound of eggplant hanging in my garden. Under eggplant was mustard, which I quickly thumbed right to. It is simple, and genius, and will go perfectly with the next pate I make. A small homemade condiment such as this is the kind of thing that take a meal from great to truly special!
