Today was grilled cheese Friday at my house! I have been feeling a little uninspired this month in the food department, so rather than fight it I fell back on an old favorite that might help scare away the grey day. My grilled cheeses can vary quite a bit depending on my mood and whats in the fridge, but today went like this. Grand Central Bakery sliced como bread, Tillamook Vintage White medium cheddar, Dijon mustard, pickled rhubarb, pickled squash, and a little Serrano Ham. Use a cast iron skillet and buttered bread to get it deeply brown, extra points if you go for something like duck fat instead of butter!
