Naomi Wins Cochon 555

Ok… so Cochon 555 is a nation wide competition with the goal of supporting sustainable agriculture, and is focused on heritage pig breeds and snout to tail cooking, it is truly an event for the pork fetishist, and the country’s most amazing chefs. Our very own Naomi Pomeroy of Beast smoked the competition this weekend, she was announced the winner at the Portland stop of Cochon 555, and among her crusher dishes was a foie gras poached pork loin that she sous vide in the Beast kitchen’s make shift sous vide machine. I know I report a lot on this amazing lady, but seriously she is genius.
